A great alternative to traditional sliders.
1/4 cup low fat mayonnaise
2 Tablespoons jarred BBQ sauce
1 teaspoon orange zest
2 Tablespoons fresh orange juice
1 scallion, sliced
1 cup bagged cole slaw mix
12 slider buns or mini hamburger buns
2 Tablespoons melted butter
12 slices Berks Hickory Smoked Ring Bologna, each 1/2-inch thick
3 slices cheddar cheese, cut into 4 pieces each
Heat an indoor grill pan or an outdoor grill over medium heat.
In a small bowl combine the mayonnaise, BBQ sauce, orange zest, orange juice and scallion, add the coleslaw and mix well, set aside.
Brush the insides of the slider buns with the melted butter. Place the buns, cut side down on the grill and grill for 4 minutes until the buns are slightly charred. Remove the buns and allow them to cool on a cooling rack so they don't get soggy.
Add the bologna slices to the grill and cook for 5 minutes.
Turn the bologna slices over and place a cheddar cheese piece on each bologna slice. Cover the grill and cook for 5 minutes until the cheese has melted. Place the bologna slices on top of the bottom halves of the slider buns. Top each bologna slice with some of the prepared coleslaw. Put the tops on and serve warm.
